Thai Chicken Salad

This is one of my favorites! This recipe is not only great for meal prep, but take out the chicken and it is a great summer salad to share at gatherings. When you use in meal prep let your family know to eat this at the beginning of the week so the veggies are still fresh.

Ingredients
  

  • large Large Rotisserie Chicken Shredded shredded
  • 1 bag carrots shredded
  • 1/2 head red cabbage shredded
  • 1 head Green Cabbage shredded
  • 1 English Cucumber diced
  • 2 red bell peppers
  • bunch green onions chopped
  • bunch cilantro chopped
  • 1/2 Cup Soy Sauce
  • Juice of 2 Limes or Rice Vinegar
  • 3 packets stevia
  • 1/4 cup olive oil
  • Pepper to taste

Instructions
 

  • Makes 8 small or 5 larger portions.
  • Divide each of the ingredients between containers. Ingredients can be mixed together or each ingredient in different area of container for appearance.
  • Add dressing and mix together right before eating.

Notes

Top with Sliced Almonds or Ramen Noodles Substitute your own cooked Chicken for Rotisserie Chicken. Consider marinating in soy sauce garlic and olive oil before cooking.
