Greek Salad

A classic that works great for meal prep because will last a couple of days in the refrigerator. Be sure to keep tomatoes whole and add dressing just before serving.

Ingredients
  

  • 2 cups grape tomatoes
  • 1 cup kalamata olives
  • 1 cup Feta Cheese crumbled
  • 4 heads Romaine lettuce chopped
  • 1 small jar Pepperchinis
  • 2 English Cucumbers cut into chunks
  • 1 large Rotisserie chicken chopped
  • 1 red onion thinly sliced
  • 1 cup olive oil
  • 1 cup red wine vinagar
  • 1 clove garlic
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1 tsp salt
  • salt

Instructions
 

  • For dressing in a small jar mix olive oil, vinegar, garlic, oregeno, salt and pepper. Shake until well blended. Chop lettuce and divide between containers. Top with remaining ingredients. Add dressing before serving.
