Greek Salad
A classic that works great for meal prep because will last a couple of days in the refrigerator. Be sure to keep tomatoes whole and add dressing just before serving.
Ingredients
- 2 cups grape tomatoes
- 1 cup kalamata olives
- 1 cup Feta Cheese crumbled
- 4 heads Romaine lettuce chopped
- 1 small jar Pepperchinis
- 2 English Cucumbers cut into chunks
- 1 large Rotisserie chicken chopped
- 1 red onion thinly sliced
- 1 cup olive oil
- 1 cup red wine vinagar
- 1 clove garlic
- 1 tsp oregano
- 1 tsp black pepper
- 1 tsp salt

Instructions
- For dressing in a small jar mix olive oil, vinegar, garlic, oregeno, salt and pepper. Shake until well blended. Chop lettuce and divide between containers. Top with remaining ingredients. Add dressing before serving.
