Marinated Chickpea, Kale and Tomato Salad
I love little salads like this to have on hand in small portions for a snack or a side to any meal. This recipe is not only great divided out for meal prep, but great as a colorful salad for gatherings. Amazing in the summer with fresh garden veggies!
Ingredients
- 1 English Cucumber cut into small chunks
- 2 cups grape tomatoes quartered
- 1 can Chickpeas drained and rinsed
- 1 bunch Kale finely chopped
- 1 Yellow Pepper diced
- 1 orange pepper diced
- 3 green onions finely chopped
- 2 tbsp olive oil
- 1 tbsp Red Wine Vinegar
- 1/2 cup crumbled feta
- Salt and Pepper to Taste
Instructions
- Mix all ingredients together until well blended. Let marinate in refrigerator at least one hour before serving.
