Marinated Chickpea, Kale and Tomato Salad

I love little salads like this to have on hand in small portions for a snack or a side to any meal. This recipe is not only great divided out for meal prep, but great as a colorful salad for gatherings. Amazing in the summer with fresh garden veggies!

Ingredients
  

  • 1 English Cucumber cut into small chunks
  • 2 cups grape tomatoes quartered
  • 1 can Chickpeas drained and rinsed
  • 1 bunch Kale finely chopped
  • 1 Yellow Pepper diced
  • 1 orange pepper diced
  • 3 green onions finely chopped
  • 2 tbsp olive oil
  • 1 tbsp Red Wine Vinegar
  • 1/2 cup crumbled feta
  • Salt and Pepper to Taste

Instructions
 

  • Mix all ingredients together until well blended. Let marinate in refrigerator at least one hour before serving.
