Pineapple Chicken and Rice
This picture is obviously not in the meal prep container. This recipe is great for making fresh, you can look like a gourmet cook when you serve it inside of a pineapple. It also works well to reheat so is great for meal prep.
Ingredients
- 2 lbs chicken breasts thinly sliced
- 8 cloves garlic
- 1 red onion
- 1 Red bell Pepper
- 1 Yellow bell Pepper
- 1 orange bell pepper
- 1 Green bell Pepper
- 1 fresh pineapple
- 2/3 cup soy sauce
- 1/2 cup chicken stock
- 1 tsp sriracha
- 1/4 cup brown sugar
- 1 tbsp cornstarch
- 2 cups brown rice
Instructions
- Freeze chicken for one hour so you can thinly slice. Saute chicken in non-stick pan over medium heat with 8 cloves garlic, salt and pepper. Remove from pan. Cut into large chunks onion, peppers and pineapple. Saute in pan over medium heat for 3 minutes. Add soy sauce, chicken stock mixture, sriracha and brown sugar, stir constantly until thickened. Add chicken cook for two minutes more.
- Cook rice according to package directions.
