Brussel Sprout Salad
This is a great salad for meal prep because brussel sprouts hold up nicely. Leave out the chicken and this salad is great as a side at gatherings. Be sure to dress salad 30 minutes before serving.
Ingredients
- 2 lbs brussel sprouts finely chopped
- 1/2 head of red cabbage finely shredded
- 2 cups finely chopped Kale
- 2 cups dried cranberries
- 1 large rotissare chicken cut into small pieces.
- 1 cup sliced almonds
- 1/2 cup shredded parmesan cheese
- 1 cup vegtable oil
- 1/2 cup olive oil
- juice of 1 lemon
- 3/4 cup of white wine vinegar
- 2 TBS stone ground dijon mustard
- 2 TBS Honey
- Salt and Pepper to Taste
Instructions
- Wash brussel sprouts. Tear off outside leaves and discard. Cut off bottoms and discard. Thinly slice and place in large bowl with kale, cabbage and cranberries. Mix together. Divide into containers and add chicken. For dressing in a large jar add oils, lemon juice, vinegar, mustard, honey and salt and pepper. Shake well. Add dressing and toss 30 minutes before serving. Top with almonds and parmesan cheese.
