Buffalo Chicken Casserole

Buffalo wings are one of my favorite foods! I love anything with buffalo sauce. This creation was inspired by my love for wings....low carb, gluten free and the fat free cheese makes it low fat too!

Ingredients
  

  • 2 small heads of Cauliflower cut into small pieces
  • 1 large rotissare chicken cut into small pieces.
  • 3/4 cup Franks Red Hot Wing Sauce
  • 1 Packet Ranch Dressing Mix
  • 1 cup Non Fat Greek yogurt
  • 2 TBS Butter
  • 2 TBS Gluten Free Flour
  • 3 Cloves Garlic minced
  • 1 1/2 cups chicken stock
  • 1/2 cup skim milk
  • 8 oz Fat Free Cream Cheese
  • 8 oz low fat or fat free shredded sharp cheddar cheese
  • Salt and Pepper to Taste

Instructions
 

  • Cut up Cauliflower into small pieces. Roast at 350 for 20 min or until tender. (Additional options..steam). Cut up chicken into small pieces. Place both in 9x13 nonstick pan.
  • Mix together in small bowl, greek yogurt, ranch mix, and hot sauce. Mix sauce together with chicken and cauliflower.
  • In a large skillet (With sides if possible) melt butter, add garlic and cook for one minute. Add flour and cook for 2 minutes stirring constantly. Add 1 1/2 cups chicken stock, stirring constantly until thick and bubbly. Add milk, cream cheese and shredded cheese and stir until blended. Pour over the chicken mixture.
  • Bake at 350 for 30 minutes. Top with sliced green onions.

Notes

If you are not doing low fat...use real quality cheese! Skip the cauliflower and this basic recipe can be a great dip!
