Italian Wedding Soup

One of my favorite comfort soups to order at a restaurant. This is my version. If you are not gluten free use orzo instead of rice. The meatball recipe is great with pasta too!

Ingredients
  

  • 2 lbs 99% fat free turkey
  • 1 cup bread crumbs bread crumbs
  • 4 egg
  • 1 large sweet onion finely diced
  • 1/2 cup Italian Parsley
  • 6 cloves garlic
  • 2 tsp salt
  • 2 tsp black pepper
  • 3 tsp Italian seasoning
  • 6 quarts chicken broth
  • 1 onion cut in half
  • 1 1/2 cups italian rice
  • 1 head curly endive chopped
  • 1/2 cup shredded parmesan
  • 1/2 tsp red pepper flakes
  • Salt and Pepper to Taste

Instructions
 

  • Make meatballs. Mix in a very large bowl ground turkey, onion, garlic, parsley, salt, pepper, Italian seasoning, breadcrumbs, egg whites. Mix well. Form into small meatballs and place on cookie sheet. (I use a cookie ball tool to make the balls)
  • In a very large soup pot bring to boil the chicken broth, red pepper flakes, onion cut in half and salt and pepper to taste. Once boiling reduce heat to simmer and add meatballs. Cook 10 minutes. Add rice, cook 15 minutes more. Remove from heat and add the chopped endive. Top with parmesan cheese to serve.
