Cucumber Feta Salad

I love this salad as a side or snack during the week. Also great as a large salad in the summer with fresh cucumbers and tomatoes from the garden.

Ingredients
  

  • 2 English Cucumbers cut into small chunks
  • 2 cups chopped grape tomatoes halved
  • 1/2 cup feta
  • 2 tbsp parsley chopped
  • juice of 1 lemon
  • 1 tbsp olive oil
  • 2 tbsp White White Vinegar
  • Salt and Pepper to Taste

Instructions
 

  • Mix all together in a small bowl. Refrigerate for at least 1 hour before serving. Keeps in refrigerator for 3 days.
