Hope you all had a great holiday with your families! This week’s recipes include some healthy and light options that are great for after the holidays. Time to get back on track, making a plan to feed our bodies with healthy food.

As always there are ones that are better to eat early in the week so they are more fresh, this week it is the salads. The rest kept well in the refrigerator. It was my first attempt at using fish in meal prep….the family verdict was that it turned out well reheated and still had great texture. With fish, meat and vegetables it is important to not overcook in initial preparation so it will reheat well.

You will notice in all of these meal plans so far that they make multiple portions for our family of four. We eat the meals more than one time through the week. You could also use the plan to do with a friend and most of the meals with the exception of ones with fresh greens can be frozen and reheated.
