Fajita Roll-ups Beans and Cauliflower Rice

Fajitas without the shell! This makes you feel fancy for meal prep, and looks elegant when serving. If you are prepping and eating on the go, you may want to cut this up first for easier eating on the go.

Ingredients
  

  • 3 lbs chicken tenderloins
  • 2 red bell peppers thinly sliced
  • 2 green bell peppers thinly sliced
  • 1 orange or yellow pepper sliced thin
  • 2 red onion
  • 4 tbsp taco seasoning
  • 16 oz cauliflower rice
  • 1 can black beans drained and rinsed
  • 1 tsp cumin
  • Juice of 1 lime
  • 1/2 cup chopped cilantro
  • 1 TBS olive oil
  • 1/4 cup chicken stock

Instructions
 

  • Preheat oven to 350 degrees.Thinly slice onions and peppers. Saute olive oil for 4-5 minutes or until tender. Coat the chicken tenderloins in taco seasoning. Cover a rolling pin in plastic wrap and roll tenderloins until thin. place peppers and onions in center and roll up the chicken. Place on baking sheet and bake at 350 for 15 minutes or until chicken is cooked through. Optional. Top with Cheese, cilantro and avocado.
  • Place cauliflower, chicken stock, cumin in small sauce pan. Bring to boil then simmer 10 minutes or until the cauliflower is tender. Add juice of 1 lime black beans, cilantro, salt and pepper.
