Peanut Zucchini Noodle Salad

Joining the spiralized craze! This salad is colorful and packed with flavor! Scale back on the peanuts on top if you are scaling back your calories. Just a few provides some great texture.

Ingredients
  

  • 3 Zucchini spiralized
  • 5 oz carrots shredded
  • 1/3 head red cabbage shredded
  • 1 bunch green onions thinly sliced
  • 2 Red Pepper sliced
  • 11/2 lbs Chicken breast shredded
  • 2 tsp ginger
  • 2 cloves garlic
  • 1/2 cup peanut butter
  • 3/4 cup soy sauce
  • 3 lime juice
  • 2 packets stevia
  • 3 tbsp vegtable oil
  • 2 tsp ginger
  • 2 cups peanuts
  • 1 tsp siracha

Instructions
 

  • Cut chicken tenderloin into small pieces. Saute with 1/4 cup soy sauce, 1 clove minced garlic, and 1 tsp ginger until cooked through.
  • Spiralize 3 zucchini, divide into containers with other vegetables and cilantro. Add chicken.
  • In a small jar, mix dressing. Add 1 tsp ginger, 1 clove garlic, juice of 3 limes, stevia, peanut butter, and vegtable oil. Add dressing right before serving.

Notes

Options: Want a lighter dressing? Omit the peanut butter or reduce.
