Another week of meal prep recipes and I think I tell you each week it includes some of my favorites…how can I have so many favorites …but this week it is true again! Drunken Noodles and Thai Chicken Lettuce Wraps are somewhat staples around our house and two of my favorite dishes. I order Drunken noodles at every Thai Restaurant I can find! This version has gluten-free rice noodles because all of my recipes are gluten-free. If you like it spicier add more chili sauce! The lettuce wraps are great for a fun dinner with your family or entertaining. They make a beautiful presentation.
Even though you are meal prepping you can still take them out, plate up the meals and have a fast but elegant meal, for you or with your family.
You notice so far each week there is a smaller salad ..this week it’s the kale quinoa salad. I package those in small containers and use them as snacks through the week. I love prepping snacks as well so they are easy to grab and healthy eating can stay on track. I will try to provide more of these snacks ideas. When you plan what you are eating and have them ready to go healthy choices are easy!
