Thai Chicken Lettuce Wraps

These are great for meal prep, but also plate up beautifully for entertaining or family dinner. The vegetables can be plated separately so everyone can create their own.

Ingredients
  

  • 4 chicken breasts cut into small pieces
  • 1 TBS Sesame oil
  • 11/2 cup soy sauce
  • Juice of 1 lime
  • 1/4 cup rice wine vinegar
  • 1/2 cup Vegetable oil
  • 1 TBS ginger
  • 6 cloves garlic pressed
  • 4 packets stevia
  • 2 tsp thai chili sauce
  • 1 English Cucumber cut into small pieces
  • 2 cups carrots shredded
  • 1/4 head red cabbage shredded
  • 1 cup cilantro
  • 1 bunch green onion chopped chopped
  • 1 Red bell Pepper diced
  • 1 Yellow bell Pepper diced

Instructions
 

  • Cut chicken into small pieces. Place into a gallon zip lock bag with 1/2 cup soy sauce, 4 cloves pressed garlic, and 1 tsp chili sauce. Mix well and let marinate for 30 minutes. Cook over high heat approx 15 minutes or until cooked through.
  • In small jar make dressing. Add vegetable oil, 1 cup soy sauce, lime juice, vinegar, stevia, 1 tsp chili sauce, and 2 cloves garlic pressed, ginger. Mix well
  • Mix together cucumber, carrots, green onions, cabbage, cilantro, and peppers.

Notes

An option could be to serve the vegetables arranged separately so everyone can choose their own toppings for the wraps.
