Tilapia with Mango Salsa

Ingredients
  

  • 2 15 oz cans black beans drained and rinsed
  • 7 tilapia filets
  • 4 tsp cumin
  • 2 tsp coriander
  • Salt and pepper
  • 3 Juice of limes
  • 4 mangos peeled and diced
  • 2 jalepenos diced
  • 1/2 red onion diced
  • 1 cup cilantro chopped
  • 1 cup grape tomatoes diced
  • 1 orange bell pepper diced

Instructions
 

  • Preheat oven to 350. On large cookie sheet line with foil. Place tilapia fillets on the foil and top with, coriander, cumin, salt, pepper and lime juice of 2 limes. Top with another piece of foil and seal. Bake for 25 min or until cooked through.
  • In small bowl, mix mangos, peppers, onions, tomatoes, cilantro and juice of one lime.
  • Serve tilapia with black beans and mango salsa.
