Tilapia with Mango Salsa
Ingredients
- 2 15 oz cans black beans drained and rinsed
- 7 tilapia filets
- 4 tsp cumin
- 2 tsp coriander
- Salt and pepper
- 3 Juice of limes
- 4 mangos peeled and diced
- 2 jalepenos diced
- 1/2 red onion diced
- 1 cup cilantro chopped
- 1 cup grape tomatoes diced
- 1 orange bell pepper diced
Instructions
- Preheat oven to 350. On large cookie sheet line with foil. Place tilapia fillets on the foil and top with, coriander, cumin, salt, pepper and lime juice of 2 limes. Top with another piece of foil and seal. Bake for 25 min or until cooked through.
- In small bowl, mix mangos, peppers, onions, tomatoes, cilantro and juice of one lime.
- Serve tilapia with black beans and mango salsa.
