I will try not to start out another week of meal prep post by saying here are some of my favorites….somehow I haven’t given you all of my favorites yet so this week we have more! I love Zuppa Toscana and Olive Garden and came up with a great version we have been having at home for years. This week I lightened it up a bit with turkey sausage that has less fat and calories and took out the dairy. It is still full of flavor. For the original version just use your favorite sausage and pour on the heavy cream.
This week I also did another breakfast item, which I need to do every week and make more of. It is great to have something you can warm up for a hot breakfast full of protein to start your day. Maybe you make breakfast on the weekend just make more so they are ready during the week. This breakfast combination reminds me of of what we have for breakfast at the cabin with great friends. I love food that triggers great memories.
Several of you have asked how do I come up with the combinations each week. As I mentioned in a previous post I usually lay out categories to brainstorm ideas (The same categories you see the recipes divided into in the recipe section). This provides diversity in what we are eating each week…..and now diversity in what I am sharing with you. I always do a soup and a salad. I love soup in the winter, and I love how even a light soup fills you up! You may have noticed there is always an Asian dish each week…..that is my daughter, she seems to be obsessed with it right now, and comes up with creative ways to make sure she gets every single one of the portions prepped. I then focus on what is on sale and what I am already buying that I can use in combination for the recipes.
This week I did not balance out cooking methods well. Usually it works out that several things are in the oven, this week if you do all of these together I will warn you cooking time is a little longer because somehow everything needed a saute pan.
