Classic Cob Salad
The Classic Cob Salad....great for meal prep, just don't add the avocados until you are ready to eat. For dressing to keep it light make your own red wine vinaigrette, or if you want to go classic use blue cheese dressing.
Ingredients
- 3 romaine hearts chopped
- 1 dozen eggs hard boiled & chopped
- 1 package turkey bacon cooked and chopped
- large Rotisserie chicken choopped
- 3 avocados chopped
- 1 bunch green onions chopped
- 1 pint of grape tomatoes chopped
- 4-8 oz blue cheese
- red wine vinaigrette for dressing
