Pulled Pork, Sweet Potatoes and Coleslaw

My kids love pulled pork sandwiches so if you like as a sandwich serve it up on a bun. This is a great make ahead meal even if you aren't doing meal prep.

Ingredients
  

  • 3 lbs pork butt roast
  • 3 tbsp Weber Kick'in Chicken Seasoning
  • 1/4 cup Apple Cider Vinegar
  • 1/2 cup apple juice
  • 6 sweet potatoes peeled and diced

Instructions
 

  • Cook Pork Roast in the Crock pot 7-8 hours on low with seasonings, apple cider vinegar and apple juice. Optional cook covered in oven at 300 for 6 hours. Remove from oven, discard fat and shred with forks
  • Bake Sweet Potatoes at 400 for 30 minutes
  • In large bowl combine shredded cabbage, parsley, vinegar, yogurt, stevia, salt and pepper.
