Pulled Pork, Sweet Potatoes and Coleslaw
My kids love pulled pork sandwiches so if you like as a sandwich serve it up on a bun. This is a great make ahead meal even if you aren't doing meal prep.
Ingredients
- 3 lbs pork butt roast
- 3 tbsp Weber Kick'in Chicken Seasoning
- 1/4 cup Apple Cider Vinegar
- 1/2 cup apple juice
- 6 sweet potatoes peeled and diced
Instructions
- Cook Pork Roast in the Crock pot 7-8 hours on low with seasonings, apple cider vinegar and apple juice. Optional cook covered in oven at 300 for 6 hours. Remove from oven, discard fat and shred with forks
- Bake Sweet Potatoes at 400 for 30 minutes
- In large bowl combine shredded cabbage, parsley, vinegar, yogurt, stevia, salt and pepper.
