Chicken Broccoli and Rice

Perfect for a healthy and basic meal prep. Easy to make in large batches.

Ingredients
  

  • 6 large chicken breasts 3 lbs
  • 2 TBS Roasted Garlic & Herb Weber Seasoning
  • 2 TBS Italian Seasoning
  • 1.5 cups uncooked quinoa cooked according to package directions
  • 1.5 cups uncooked brown rice cooked according to package directions
  • 1 TBS onion powder
  • 6 cloves fresh garlic
  • 2TBS coconut oil
  • Salt and Pepper to Taste
  • 2 lbs broccoli florets
  • 2 TBS olive oil
  • 1/4 cup chicken broth

Instructions
 

  • 1. Preheat oven to 375 degrees. Place Chicken Breasts into 9x13 pans and season with roasted garlic & herb, italian seasoning, olive oil and salt and pepper. Pour chicken stock into bottom of the pan and cover with foil. Bake 45 min or until done in the center.
  • Make Quinoa and Brown rice according to package instructions. Use chicken broth instead of water for more flavor. Add to the water, minced garlic cloves, onion powder and salt and pepper.
  • Steam Broccoli, season with salt and pepper.
