Beef Stew with Sweet Potatoes
Ingredients
- 2 lbs stew meat
- 4 TBS Cornstarch
- 2 TBS coconut oil or olive oil
- 4 cloves minced garlic
- 2 large onion roughly chopped
- 16 oz sliced mushrooms
- 1 lb carrots peeled and roughly chopped
- 1 bunch of celery roughly chopped
- 1 qt beef stock
- 2 TBS worchestire sauce
- 1 tsp rosemary
- 1 tsp thyme
- 1 tsp parsley
- 3 large sweet potato peeled and cubed
- Salt and Pepper to Taste
Instructions
- Toss the stew meat in cornstarch. Heat coconut oil over high heat in large soup pan. Add meat and brown on all sides. Remove from pan and set aside. Add the onions and garlic and heat until tender. Add remaining ingredients. Heat to boiling then reduce heat, add meat back in and simmer on how for one hour.
