Chop chicken into small pieces. place into gallon zip lock bag with 1/2 cup buffalo sauce and Kick'in Chicken seasoning. Let sit in the refrigerator for 30 minutes.
In a small bowl prepare dressing. Mix together greek yogurt, blue cheese, lemon juice, white wine vinegar, cracked pepper, garlic and salt. Mix together well. To reach desired consistency mix in water one TBS at a time.
In large skillet, over medium high heat, add entire contents of bag and cook until chicken is cooked through. Toss with an additional 1/2 cup of buffalo sauce and set aside to cool.
Chop lettuce and celery. Top with chicken and dressing.
