Italian Meatloaf and Garlic Mashed Potatoes
Ingredients
- 4 lbs ground turkey
- 2 large onions diced
- 4 cloves garlic pressed
- 1 tbsp olive oil
- 2 tsp salt
- 2 tsp pepper
- 8 oz bread crumbs (we use gluten free)
- 1 tsp dried parsley
- 3 eggs beaten
- 1/2 cup worcestershire
- 1 jar marinara sauce
- 4 lbs potatoes peeled and diced
- 1/2 cup butter
- 4 cloves garlic
- 1 cup milk
- 2 tsp salt
- fresh cracked pepper
- 2 lbs Green Beans
Instructions
- Preheat oven to 350. In a saute pan, heat olive oil, add onions and 4 cloves garlic and cook until translucent. Set aside and set cool.
- In large bowl mix turkey, eggs, salt, pepper, parsley, 2/3 cup marinara and worcestershire sauce, and onion and garlic mixture. Mix well then add bread crumbs.
- Line a cookie sheet with foil and form a large loaf (that covers most of cookie sheet) Top with remaining marinara sauce. Bake for 1 hour 15 min or until done in center.
- For mashed potatoes, Boil large pot of water and add potatoes and cook until tender about 15 minutes. Drain.
- In a saute pan add butter, and 4 cloves garlic, cook 2 minutes, add milk and heat through. Add this mixture to the potatoes along with salt and pepper and blend with hand mixer until smooth and creamy.
- Boil cleaned fresh green beans until tender about 8-10 minutes.
