Italian Meatloaf and Garlic Mashed Potatoes

Ingredients
  

  • 4 lbs ground turkey
  • 2 large onions diced
  • 4 cloves garlic pressed
  • 1 tbsp olive oil
  • 2 tsp salt
  • 2 tsp pepper
  • 8 oz bread crumbs (we use gluten free)
  • 1 tsp dried parsley
  • 3 eggs beaten
  • 1/2 cup worcestershire
  • 1 jar marinara sauce
  • 4 lbs potatoes peeled and diced
  • 1/2 cup butter
  • 4 cloves garlic
  • 1 cup milk
  • 2 tsp salt
  • fresh cracked pepper
  • 2 lbs Green Beans

Instructions
 

  • Preheat oven to 350. In a saute pan, heat olive oil, add onions and 4 cloves garlic and cook until translucent. Set aside and set cool.
  • In large bowl mix turkey, eggs, salt, pepper, parsley, 2/3 cup marinara and worcestershire sauce, and onion and garlic mixture. Mix well then add bread crumbs.
  • Line a cookie sheet with foil and form a large loaf (that covers most of cookie sheet) Top with remaining marinara sauce. Bake for 1 hour 15 min or until done in center.
  • For mashed potatoes, Boil large pot of water and add potatoes and cook until tender about 15 minutes. Drain.
  • In a saute pan add butter, and 4 cloves garlic, cook 2 minutes, add milk and heat through. Add this mixture to the potatoes along with salt and pepper and blend with hand mixer until smooth and creamy.
  • Boil cleaned fresh green beans until tender about 8-10 minutes.
