Pork with Parmesan Cauliflower and Asparagus

Ingredients
  

  • 5 lb pork sirloin bone in
  • 1 cup apple juice or chicken stock
  • 2 Tbsp steak and chop seasoning
  • 6 cloves garlic
  • 2 bunches asparagus ends removed
  • 1 head cauliflower
  • 1/4 cup Parmesan cheese
  • 2 TBS olive oil
  • salt and fesh cracked pepper to taste

Instructions
 

  • Preheat oven to 350. In a 9x13 Pan place pork sirloin. Season with steak and chop seasoning. Pour apple juice in the pan along with onion cut in half and 2 cloves garlic. Cover with foil and bake 2 hours or until internal temperature is 170 degrees. Remove and cut into pieces.
  • In saute pan with 1 TBS olive oil, heat 2 cloves garlic and saute asparagus.
  • Chop cauliflower into small pieces. Add to boiling water and cook for 10 minutes or until tender. In saute pan, add olive oil and 2 cloves minced garlic. Cook 2 minutes. Add cauliflower, parmesan, and olive oil and garlic to vitamix. Season with salt and pepper.
  • For meal prep divide pork, cauliflower and asparagus.
