New menu items for meal prep and some new features up on the blog, I will write another post explaining them more in detail but I am so excited we have launched nutritional labels, shopping list generator and meal planner! This week’s prep includes some classics and lots of flavor. Mexican Lasagna is a dish I have been making forever…as you can see this one is a little higher in calories so if you are cutting down you may want to adjust your portion or substitute ground turkey and use a little less cheese. Even if you aren’t using the recipe for meal preps in portions, this is a great make ahead meal to have in your refrigerator to pop in the oven during the week. It also freezes well if you make two batches or when I make dishes like this I love making two and dropping one off to a busy friend.
Thai Basil Turkey is really suppose to be Chicken, but I had ground turkey and I think it tasted just as good. Substitute ground chicken if you have some though. Ground meat in a Asian dish gives it a twist and this one is full of flavor. Add more jalapenos if you want more spice and I always leave the rice out of my portion and eat in boston lettuce leaves.
Jambalaya is a dish, I feel like I can always throw together because we seem to always have the sausage and shrimp in the freezer and the rest in our pantry, it is great to have go to dishes like this where you and add to the pan what you have to create a great meal when you don’t want to go to the store. The salad is super simple, but I love this fresh dressing and the crunch of the roasted lima beans.
