Mexican Lasagna

Just like the name would suggest this is a mexican version of lasagna. Layered up and full of yummy cheese! I have been making this one forever! Even if you aren't dividing into portions for meal prep this is a great one to make ahead to have in the fridge and cook when you are ready to serve.

Ingredients
  

  • 1 1/2 lb ground beef or turkey
  • large onion diced
  • 16 oz shredded cheese low fat
  • 24 oz cottage cheese low fat
  • 18 corn tortillas
  • 2 15 oz cans black beans
  • 2 bell peppers diced
  • 1 jar salsa
  • 2 tbsp taco seasoning
  • 1/2 cup water
  • 4 oz black olives sliced
  • 1 bunch green onion sliced
  • jalapeno slices for garnish

Instructions
 

  • Brown ground beef onions Drain. Add taco seasoning, water and salsa. Cook 3 minutes on medium low heat or until reduces. Add beans and bell pepper.
  • Preheat oven to 350. In 9x 13 pan place 6 tortillas as bottom layer. Top with 1/3 of meat and bean mixture, top with 1/3 of cottage cheese then 1/3 of shredded cheese. Repeat for 2 more layers. Bake 30 minutes.
  • Top with sliced olives, green onions and jalapeno slices. For spicier version add jalepenos in the layers.
