Mexican Lasagna
Just like the name would suggest this is a mexican version of lasagna. Layered up and full of yummy cheese! I have been making this one forever! Even if you aren't dividing into portions for meal prep this is a great one to make ahead to have in the fridge and cook when you are ready to serve.
Ingredients
- 1 1/2 lb ground beef or turkey
- large onion diced
- 16 oz shredded cheese low fat
- 24 oz cottage cheese low fat
- 18 corn tortillas
- 2 15 oz cans black beans
- 2 bell peppers diced
- 1 jar salsa
- 2 tbsp taco seasoning
- 1/2 cup water
- 4 oz black olives sliced
- 1 bunch green onion sliced
- jalapeno slices for garnish
Instructions
- Brown ground beef onions Drain. Add taco seasoning, water and salsa. Cook 3 minutes on medium low heat or until reduces. Add beans and bell pepper.
- Preheat oven to 350. In 9x 13 pan place 6 tortillas as bottom layer. Top with 1/3 of meat and bean mixture, top with 1/3 of cottage cheese then 1/3 of shredded cheese. Repeat for 2 more layers. Bake 30 minutes.
- Top with sliced olives, green onions and jalapeno slices. For spicier version add jalepenos in the layers.
