Sweet Potato Egg Cups

Ingredients
  

  • 12 eggs
  • 1 sweet potato
  • Salt and pepper
  • Kale

Instructions
 

  • Slice sweet potato into 12 slices. place in the bottom of muffin tins. Crack one egg into each. Top with salt, pepper, chopped kale and your favorite seasonings. Bake at 350 until eggs reach your desired doneness. About 15 minutes.
