Stuffed Sweet Potatoes

Ingredients
  

  • 6 sweet potatoes
  • 1.5 lbs ground turkey
  • 1 red onion diced
  • 1 Yellow bell Pepper diced
  • 4 cloves garlic pressed
  • 8 oz baby spinach chopped
  • bacon bits optional topping
  • shredded cheese optional topping
  • Salt and Pepper to Taste

Instructions
 

  • Bake sweet potatoes at 375 for one hour or until cooked through. Cut in half.
  • Brown turkey in large saute pan. Season with salt and pepper. Remove and set aside. In same pan with a little oil saute onions until translucent, then add garlic, peppers, and spinach, cook two more minutes. Add turkey back in and stir until combined. Top peppers with the turkey mixture.
  • Optional. Top with chopped bacon or your favorite cheese.
