Tilapia with Asparagus Quinoa

Simple, light and healthy dish that you can whip together in 15 minutes. Chicken broth and garlic add flavor to the quinoa and the tilapia seasonings are full of flavor!

Ingredients
  

  • 8 small tilapia fillets
  • 1 cup quinoa
  • 1 cup chicken broth
  • 1 bunch asparagus
  • 1/2 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp Weber Boston Bay Seasoning
  • 1 tsp Weber Roasted Garlic and Herb Seasoning
  • 2 cloves garlic pressed
  • Salt and Pepper to Taste
  • 2 tbsp olive oil

Instructions
 

  • In saucepan, bring to boil chicken stock, quinoa and garlic. Boil 15 minutes. Remove from heat and season with salt and pepper to taste.
  • Pat tilapia dry. Mix together cayenne pepper, paprika, Boston Bay and Roasted Garlic seasoning. Season both sides of tilapia with mixture and fresh cracked pepper. In large saute pan heat 1 tbsp olive oil. Cut ends off asparagus and cut into equal pieces. Saute over high heat for 3-5 minutes until tender. Season with salt and pepper. Remove from pan and mix with quinoa. Add another tbsp of olive oil to the pan and add the tilapia. Cooking over medium high heat, 3-5 minutes on each side until cooked through.
