Kale Quinoa Take 2
Ingredients
- 1 bunch kale finely chopped
- 1 cup quinoa
- 2 cups chicken broth or vegetable broth
- 1 English Cucumber cut in quarters then sliced
- 1 pint grape tomatoes halved
- 1 cup green olives sliced
- 1/2 cup pepperoncini peppers chopped
- 1 bunch green onions sliced
- 2 tbsp olive oil
- 2 tbsp Red Wine Vinegar
- 2 cloves garlic pressed
- salt and fresh cracked pepper to taste
Instructions
- In saute pan, bring to a boil 2 cups broth, 1 cup quinoa and 2 pressed garlic cloves. Reduce heat and simmer for 15 minutes. Remove lid and remove from heat and let cool.
- In large bowl combine all remaining ingredients toss and let flavors marinate in the refrigerator for at least 15 minutes.
