Kale Quinoa Take 2

Ingredients
  

  • 1 bunch kale finely chopped
  • 1 cup quinoa
  • 2 cups chicken broth or vegetable broth
  • 1 English Cucumber cut in quarters then sliced
  • 1 pint grape tomatoes halved
  • 1 cup green olives sliced
  • 1/2 cup pepperoncini peppers chopped
  • 1 bunch green onions sliced
  • 2 tbsp olive oil
  • 2 tbsp Red Wine Vinegar
  • 2 cloves garlic pressed
  • salt and fresh cracked pepper to taste

Instructions
 

  • In saute pan, bring to a boil 2 cups broth, 1 cup quinoa and 2 pressed garlic cloves. Reduce heat and simmer for 15 minutes. Remove lid and remove from heat and let cool.
  • In large bowl combine all remaining ingredients toss and let flavors marinate in the refrigerator for at least 15 minutes.
