Roasted Red Pepper Penne
Ingredients
- 1 box penne pasta we use gluten free (nutritional info may differ)
- 1.5 lbs chicken breasts cut into small pieces
- 3 red bell peppers
- 6 cloves garlic pressed
- 1 tbsp olive oil
- 1 tbsp basil chopped
- 1 tsp red pepper flakes
- 1/2 cup milk or broth or water (used milk for nutritional info)
- salt and fresh cracked pepper
- shaved parmesan cheese optional
Instructions
- Preheat oven to 450. Place 3 red bell peppers on cookie sheet lined with foil and roast for 40 minutes. Remove from oven and cover with foil for 10 minutes to let steam. Remove foil. Let cool slightly. Peel peppers, remove stems and seeds and blend in Vitamix with 1 tbsp olive oil.
- Cook Penne according to package directions.
- In saute pan add 1 tbsp olive oil saute garlic and chicken. Add basil, blended red peppers, red pepper flakes, salt and pepper. heat through.
