Salad in a Jar
Jar salads are all the rage and you can use all of your favorite combinations of ingredients. They stay fresh for a few days for meal prep as long as you layer correctly with more delicate ingredients and lettuce on the top. When I made these today my teens said "Wow, my Mom has lost it! She is putting salad in a Jar!"
Ingredients
- 3 pack Romaine lettuce chopped
- 1 cup grape tomatoes
- 2 bell peppers orange, yellow, chopped
- 4 carrots sliced
- 8 radishes cliced
- 1 cup Chickpeas
- 1/2 cup pepperoncinis chopped
- 1/2 Rotisserie chicken shredded
- 1 English Cucumber chopped
- 1/3 cup olive oil
- 1/4 cup Red Wine Vinegar
- 2 cloves garlic
- 2 tsp Italian seasoning
- Salt and Pepper to Taste
Instructions
- Mix together olive oil, vinegar, italian seasoning, garlic, salt and pepper in small jar. Divide dressing between 4 mason jars.
- Layer ingredients. First chickpeas and chicken then peppers, radishes, pepperoncinis, carrots, tomatoes, cucumbers, with lettuce on top.
