Salad in a Jar

Jar salads are all the rage and you can use all of your favorite combinations of ingredients. They stay fresh for a few days for meal prep as long as you layer correctly with more delicate ingredients and lettuce on the top. When I made these today my teens said "Wow, my Mom has lost it! She is putting salad in a Jar!"

Ingredients
  

  • 3 pack Romaine lettuce chopped
  • 1 cup grape tomatoes
  • 2 bell peppers orange, yellow, chopped
  • 4 carrots sliced
  • 8 radishes cliced
  • 1 cup Chickpeas
  • 1/2 cup pepperoncinis chopped
  • 1/2 Rotisserie chicken shredded
  • 1 English Cucumber chopped
  • 1/3 cup olive oil
  • 1/4 cup Red Wine Vinegar
  • 2 cloves garlic
  • 2 tsp Italian seasoning
  • Salt and Pepper to Taste

Instructions
 

  • Mix together olive oil, vinegar, italian seasoning, garlic, salt and pepper in small jar. Divide dressing between 4 mason jars.
  • Layer ingredients. First chickpeas and chicken then peppers, radishes, pepperoncinis, carrots, tomatoes, cucumbers, with lettuce on top.
