Asparagus Spring Salad
This salad just screams Spring to me! Whenever asparagus is on sale I make this salad and it is one of my favorites to bring to gatherings. Bright, festive and flavorful.
Ingredients
- 1 bunch asparagus trimmed & cut in thirds
- 1 bell pepper orange, sliced
- 1 pint grape tomatoes halved
- 3 oz Feta Cheese crumbled
- 2 ears sweet corn
- 2 tbsp fresh basil chopped
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and Pepper to Taste
Instructions
- Boil water in large pot. Place cleaned corn into boiling water for 6 minutes, then transfer to ice bath. Drain and cut off the cob. Try to keep some in chunks. In same boiling water, boil asparagus for one minute and remove to ice bath. Drain. Place both in large bowl.
- Add peppers that are sliced and cut in half, tomatoes, feta basil vinegar, oil and season with salt and pepper. Toss and let flavors marinate for 20 minutes before serving.
