Kale Salad with Lemon Vinagrette
I could eat all four servings myself! I like this salad best when made the night before so kale has a chance to marinate in all the flavors.
Ingredients
- 1 large bunch kale chopped
- juice of one lemon
- 1/4 cup olive oil
- 1 clove garlic pressed
- salt and pepper to taste
- shredded parmesan cheese
Instructions
- In small mason jar, mix olive oil, lemon juice, garlic, salt and pepper. Shake well. Toss with kale and cheese. Refrigerate for at least an hour to let flavors combine. Stores well for a couple days.
