Ground Turkey Fall Soup with Sweet Potato and Kale
A healthy comfort soup for fall
Ingredients
- 3 quarts chicken stock
- 2 lbs ground turkey
- 1 large onion finely chopped
- 4 cloves garlic pressed
- 3 sweet potatoes cubed
- 1 bunch kale stems removed and chopped
- 2 tsp red pepper flakes
- 2 bay leaves
- Salt and Pepper to Taste
Instructions
- In large pot, brown ground turkey and season with salt and pepper. Add finely chopped onions and pressed garlic, saute. Add in chicken stock, potatoes, red pepper flakes, bay leaves and more salt and pepper. Simmer for 30 minutes. Add kale and cook for another 10 minutes. Remove from heat and serve.
