Spiralized Italian Soup

Spiralized zucchini become the noodles in this yummy but healthy italian soup.

Ingredients
  

  • 8 cups vegetable broth
  • 28 oz can diced tomatoes
  • 1 large sweet onion diced
  • 4 stalks celery diced
  • 4 large carrots spiralized
  • 1 lb zucchini spiralized spiralized
  • 1 lb turkey italian sausage (used normal for nutritional info but get the low fat Italian sausage)
  • 2 cans white kidney beans drained and rinsed
  • 4 cloves garlic pressed
  • 2 tbsp Italian seasoning
  • 2 bay leaves
  • 1 tbsp red pepper flakes
  • Salt and Pepper to Taste

Instructions
 

  • In large soup pot brown sausage. Remove from pan. Saute onions garlic and celery in oil left in pan. Add sausage back in and broth, tomatoes, beans, and seasonings. Simmer for 30 minutes. Add spiralized vegetables and and cook 10 minutes more.
