Wild Rice Turkey Soup
The perfect soup for Thanksgiving leftovers. Why don't we cook turkeys year round?
Ingredients
- 8 cups chicken broth
- 3 cups shredded turkey
- 3 large carrots diced
- 3 stalks celery diced
- 1 large onion diced
- 2 garlic cloves pressed
- 3 cups wild rice uncooked
- 2 bay leaves
- 1 tsp thyme leaves
- handful of fresh parsley chopped
- Salt and Pepper to Taste
- olive oil
Instructions
- In large soup pan, drizzle with olive oil. Add onion and garlic and saute. Add celery and carrots, thyme salt and pepper and wild rice, saute for a few minutes more. Add chicken broth and simmer 20 minutes. Add cooked turkey and cook 5 minutes more. Serve or divide and freeze.
