Wild Rice Turkey Soup

The perfect soup for Thanksgiving leftovers. Why don't we cook turkeys year round?

Ingredients
  

  • 8 cups chicken broth
  • 3 cups shredded turkey
  • 3 large carrots diced
  • 3 stalks celery diced
  • 1 large onion diced
  • 2 garlic cloves pressed
  • 3 cups wild rice uncooked
  • 2 bay leaves
  • 1 tsp thyme leaves
  • handful of fresh parsley chopped
  • Salt and Pepper to Taste
  • olive oil

Instructions
 

  • In large soup pan, drizzle with olive oil. Add onion and garlic and saute. Add celery and carrots, thyme salt and pepper and wild rice, saute for a few minutes more. Add chicken broth and simmer 20 minutes. Add cooked turkey and cook 5 minutes more. Serve or divide and freeze.
