Stuffed Acorn Squash
Ingredients
- 4 acorn squash
- 2 lbs chorizo
- red bell pepper diced
- yellow bell pepper diced
- 1 Can black beans drained and rinsed
- handful cilantro chopped
- Bunch of Green Onions Chopped
- 1 cup shredded cheddar cheese
- olive oil
- Salt and Pepper to Taste
Instructions
- Cut the acorn squash in half, scoop out the insides, and drizzle with olive oil. Bake at 375 for 40 minutes. Brown chorizo, add in peppers, black beans, green onions, cilantro and cheese. Fill the squash with chorizo mixture. Bake for an additional 15 minutes.
