Balsamic Chicken

Love this flavorful chicken preparation for meal prep. I always make extra of the chicken for multiple uses in prep, salads, pasta with veggies. Yum!

Ingredients
  

  • 2.5 lbs Chicken Tenders
  • 1 red onion
  • 6 cloves garlic
  • 1 pint grape tomatoes
  • 1/2 cup balsamic vinegar
  • 2 tbsp dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • fresh cracked pepper to taste
  • 1 cup red wine optional
  • 2 tbsp fresh basil chopped
  • 1/2 cup shredded parmesan optional

Instructions
 

  • In ziploc bag, combine chicken with balsamic vinegar, mustard, honey and garlic. Marinate in refrigerator 20 minutes to 1 hour. Heat saute pan to medium high. Add 2 tbsp olive to the pan, heat then add chicken with marinade and the onions. Brown on each side for 2-3 minutes until it gets nice color. Optional add wine to deglaze pan and the grape tomatoes. Cook a couple minutes more until chicken is cooked through.
  • Serving options. Serve over pasta of your choice. Double the marinade recipe , add olive oil and toss with 2 lbs of halved brussel sprouts. Roast at 425 degrees for 25 minutes.
