You will notice this week’s meal prep picture looks a little different. Instead of one big picture of all of the prep for the week each recipe is featured on its own. My method this week looked a little different too. Instead of one massive effort where I make everything, drink wine and destroy my kitchen, ( the method I usually use and love) I cooked in different shifts over the weekend. You have to make meal prep work fit in and work for your life!
This weekend everyone was miraculously home at the same time Saturday for lunch so I made lunch for the family to eat together, doubled the recipe for Balsamic Chicken. I served it fresh over pasta for lunch then used all the extra chicken I made for meals for the week. Balsamic Chicken is great to make in a large batch and use throughout the week on salads, with veggies or pasta. At the same time I was making lunch I threw some brussel sprouts in the oven to roast to go with the chicken for prep and viola round one was done! You may also notice not all the boxes were the same, I used chicken in each of the preps but the kids and got extra pasta and we got extra veggies.
After church I did a quick round two before we headed out to lacrosse for the afternoon. I started baking the sweet potatoes for the Stuffed Sweet Potatoes I made for lunch (and of course made extra so we all have another one in the fridge for a meal during the week.) While the potatoes were baking , I made the turkey filling, buffalo bites and cooked the oatmeal. In one hour the rest of the meals for the week were done and the kids even cleaned up the kitchen. We have one less meal prepped this week, because I have corned beef and cabbage ready to go in the crockpot on Friday!
