This week for meal prep I threw some meat on our Traeger Smoker. Everyone I cook for knows how much I LOVE my Traeger!  It is so easy to use, cook meat that stays full of juice and flavor. As the weather gets nicer you are sure to see more recipes on the smoker. It is so much easier than grilling because you literally get to throw the meat on and forget it. Everything I have made turns out great. It is literally so easy and everyone will think you are the next Masterchef! Enough about the Traeger, but seriously with summer coming consider the investment. It is well worth it!

I used flank steak, pork tenderloin and chicken breasts this week and was able to smoke them all at the same time, while roasting potatoes, asparagus, and cauliflower in the oven. While everything was cooking, I through together the Asian slaw and some salads and meal prep was done in an hour. I posted some recipes which you can see below, hopefully you mainly learn just from the method and gain ideas of how simple meal prep can be. When putting them together I mixed up the combinations to give some variety and let everyone in the family have their favorites. For example (and you can see in the pictures) I put pork with the slaw, potatoes and the cauliflower. Chicken with some spinach and feta, asparagus, cauliflower.  Lots of combinations, smaller portions for eating several meals during the day.

One of my favorite salads of all time is in this week’s prep and watch the blog for more salads during the week. One of my best friends, Katie discovered the Arugula Watermelon Salad years ago when we were looking for a fresh new idea for a summer potluck. It was when I first fell in love with arugula. I believe we originally made it with feta (which is great too), but I have come to love goat cheese and arugula.  If you haven’t tried arugula…..find it..try it! It has a very peppery strong flavor. Great to mix in salads. I love on its own as a green with a sweet like watermelon. and love on a sandwich!  I love fresh salads so sometimes incorporate a multiple prep strategy since salads are better in the first couple days. Just make multiples..that’s meal prep!
