Squash, Pomegranate, Spinach, Goat Cheese Salad!
I stole this one from my incredible friend (& woman who has been such a significant partner in learning about feeding our bodies well!) This is the PERFECT fall salad....YUM...lets be honest I would have used arugula because I'm obsessed, but SOOO good!! For meal prep just keep the ingredients separate in the prep container..bag up the spinach with a paper towel. The vinaigrette is a basic I always have in a jar for lots of recipes. Make it your own.
Ingredients
- 1 large butternut squash cubed
- 1 large container baby spinach about 12 oz
- seeds from 1 pomegranate
- 4 oz goat cheese
- 1/2 cup olive oil
- 1/4 cup Red Wine Vinegar
- 1 shallot minced
- 1 tbsp dijon mustard
- 1 tbsp honey
- 1 clove garlic pressed
- Salt and Pepper to Taste
- optional pecans or walnuts for garnish
Instructions
- Roast the butternut squash on a cookie sheet, drizzled with olive oil salt and pepper for 20 minutes at 350. Let cool. Mix dressing in mason jar. Mix olive oil, red wine vinegar, shallots, mustard, honey, garlic,salt and pepper. Shake well and let sit and marinate. Shaking often. Lightly toss spinach, goat cheese, pomegranates, squash and desired amount of dressing.
