Turkey Lasagna

Lasagna has always been a family favorite. I used to make lasagna to bribe my brother too. Works great for meal prep, this also works great to make several at a time...one to eat for dinner, one to freeze, one to gift to a friend! Check out the modifications....I have changed to make low fat and gluten free, but my original version had beef and LOTS of CHEESE! You can make your own sauce, I save time with brands we like with low sugar and few ingredients.

Ingredients
  

  • 1 package lasagna noodles gluten free noodles
  • 24 oz fat free cottage cheese
  • 2 -24 oz tomato basil pasta sauce
  • 2 - 8 oz mozzarella shredded cheese low fat optional
  • 4 oz parmesan shredded
  • 1.5 lbs 99% fat free ground turkey
  • 1 sweet onion finely diced
  • 6 cloves garlic
  • Salt and pepper
  • 2 yellow Zucchini sliced 1/4- 1/2thick
  • 2 Green Zucchini sliced 1/4-1/2 1/2thick
  • 1 TBS Italian seasoning
  • 2 tsp Garlic Powder
  • 1 TBS olive oil
  • 1/2 cup Parmesan cheese freshly grated
  • Salt and Pepper to Taste

Instructions
 

  • Preheat oven 350 degrees. Slice Zucchini. Arrange on 2 large cookie sheets. spray with olive oil. Sprinkle with garlic, italian seasoning, salt, pepper, and parmesan. Bake 20 minutes.
  • For lasagna. Brown turkey, onion and garlic together. Season with salt and pepper. Add 2 jars of pasta sauce (reserve about 1/2 cup)
  • In 9x13 pan begin layering lasagna. Start with 1/2 cup of pasta sauce. Layer 3 lasagna noodles, then 1/3 turkey,onion, sauce mixture, 1/3 of cottage cheese, 1/3 of shredded cheese. Repeat for 3 layers. Top with parmesan cheese. Cover with foil. Bake for 45 minutes at 350 degrees. Uncover bake 30 minutes more.

Notes

Substitute beef for turkey, amazing cheese, put in mushrooms or add some red pepper for some spice!
