Cucumber Feta Salad
I love this salad as a side or snack during the week. Also great as a large salad in the summer with fresh cucumbers and tomatoes from the garden.
Ingredients
- 2 English Cucumbers cut into small chunks
- 2 cups chopped grape tomatoes halved
- 1/2 cup feta
- 2 tbsp parsley chopped
- juice of 1 lemon
- 1 tbsp olive oil
- 2 tbsp White White Vinegar
- Salt and Pepper to Taste
Instructions
- Mix all together in a small bowl. Refrigerate for at least 1 hour before serving. Keeps in refrigerator for 3 days.
