Tilapia with Beans & Carrots

Ingredients
  

  • 6 tilapia fillets
  • 8 stalks carrots peeled and sliced
  • 1 1lb Green Beans
  • 1 Juice of Lemon
  • 1 large onion cut in half
  • 3 cloves garlic peeled and cut in half
  • 1/2 TBS olive oil
  • Salt and Pepper to Taste
  • 2 TBS flat leaf parsley chopped

Instructions
 

  • Preheat oven to 375 degrees. Line baking sheet with foil place tilapia filets. Season with juice of one lemon, parsley, salt and pepper, place onion and garlic between the filets. Top with another sheet of foil. Bake for 20 minutes at 375 degrees or until fish is cooked through.
  • Saute carrots in pan with olive oil for 10 minutes. Season with salt and pepper.
  • Boil 2 cups of water, add green beans and boil for 5 minutes. Remove and add salt and pepper.

Notes

The basic concept for meal prep can be used with other fish and different vegetables. Simple preparation that works well with meal prep.
