Canadian Bacon Egg Cups

These eggs cups are so easy to throw together during meal prep, but great to have on hand for breakfast on the go, or if you have guests and want a quick breakfast. Cook eggs until your desired doneness.

Ingredients
  

  • package of 12 canadian bacon circles
  • 1 dozen eggs
  • 1 cup chopped spinach
  • 1 cup sliced grape tomatoes
  • Salt and Pepper to Taste

Instructions
 

  • Heat oven to 350. Spray a muffin tin with olive oil. Place 1 canadian bacon in each tin. Crack one egg open on each one. Top with spinach, tomato, salt and pepper. Bake 20 minutes or until egg cooked through (or cook the eggs to your desired doneness.
