Chicken Breast w/ Sweet Potatoes & Snap Peas This one is a basic and can be used with any combination of meat, starch and vegetable. Great as one option a week in meal prep. This recipe makes 6 portions.

Ingredients
  

  • 6 chicken breasts
  • 1/2 cup chicken broth
  • 1 tablespoon of italian seasoning
  • Garlic Salt and pepper to taste
  • 3 sweet potatoes peeled and cut into cubes
  • 3 cups snap peas

Instructions
 

  • Place chicken breasts seasoned with salt, pepper and italian seasoning in 9 x13 pan. Fill bottom with chicken broth cover with foil and cook 1 hour at 375 degrees. Check chicken after 45 minutes. If cooking multiple things in the oven for meal prep be sure to increase baking time. Place sweet potatoes in 9 x 13 baking dishes season with salt and pepper and bake at 375 for 1 hour. Boil 5 cups of water. Add snap peas, boil for 1 minute, drain, and put in ice water to stop cooking. Once chicken breasts have cooled, slice. For meal prep divide portions of sweet potatoes, peas and chicken to containers.
