Turkey and White Bean Soup

Turkey and White Bean Soup This makes a large batch of soup. Adjust for the size you need. I love soup in the fall, so filling, so comforting!

Ingredients
  

  • 1 1/2 lbs ground turkey
  • 2 onions diced
  • 4 cloves garlic
  • 2 bay leaves
  • 2 tablespoons Italian seasoning
  • 6 carrots peeled and diced
  • 6 stalks Celery diced
  • 1 28 ounce can petite diced tomatoes
  • 1 can white kidney beans drained and rinsed
  • 2 can northern beans drained and rinsed
  • 2 quarts chicken broth
  • Salt and Pepper to Taste

Instructions
 

  • In a large pot, saute onions and garlic. When soft add chicken broth, carrots, celery, bay leaves, italian seasoning, beans, salt and pepper. Bring to a boil, then reduce the heat and simmer for one hour. In a separate pan, brown ground turkey. Season with salt and pepper. Drain excess fat and add to soup. For meal prep, once soup has cooled add divide into mason jars.

Notes

Modifications Substitute ground beef or diced chicken or ground turkey
