Chicken and Chickpea Soup

Healthy low-fat, gluten free, low-carb soup.

Ingredients
  

  • 4 quart chicken broth
  • 2 cans Chickpeas Drained and Rinsed
  • 2 cans petite diced tomatoes
  • 4 stalks Celery chopped
  • 4 large carrots chopped
  • 1 large sweet onion chopped
  • 1 head Kale stems removed and chopped
  • 3 cloves garlic
  • 1 tbsp cumin
  • 2 tsp oregeno
  • Salt and Pepper to Taste
  • 2 lbs Chicken breast cut into small peices

Instructions
 

  • Place onions, garlic, carrots, and celery in large soup pan and cook onions translucent. Add Chicken broth, chicken, tomatoes in juice, chickpeas, cumin, oregeno, salt and pepper. Simmer for 30 minutes. Add chopped kale and remove from heat.
