Pesto Chicken over Zucchini Noodles
Ingredients
- 8 Zucchini
- 1 large onion
- 4 cloves garlic
- 2 lbs chicken breasts chopped
- 1 cup basil pesto recipe on site
- 1 can petite diced tomatoes
- 1 cup mozzarella shredded
- 1/2 cup parmesan shredded
- 1 tsp red pepper flakes
- 2 TBS olive oil
- Salt and Pepper to Taste
Instructions
- Spiralize Zucchini. Boil 3 quarts of salted water. Add zucchini and cook 3 minutes. Drain, toss with 1 TBS olive oil and set aside.
- In large saute pan over medium high heat saute chicken until almost cooked through (about 5 to 7 minutes). Resist temptation to stir frequently so chicken gets a little color. Add basil pesto (you can buy a jar at the store or make your own from recipe on this site) red pepper flakes and diced tomatoes, cook 2 minutes. Add cheese and stir until combined.
- Top zucchini noodles with the chicken and sauce.
