Spiralize Zucchini. Boil 3 quarts of salted water. Add zucchini and cook 3 minutes. Drain, toss with 1 TBS olive oil and set aside.
In large saute pan over medium high heat saute chicken until almost cooked through (about 5 to 7 minutes). Resist temptation to stir frequently so chicken gets a little color. Add basil pesto (you can buy a jar at the store or make your own from recipe on this site) red pepper flakes and diced tomatoes, cook 2 minutes. Add cheese and stir until combined.
Top zucchini noodles with the chicken and sauce.
