Sausage Eggs and Sweet Potatoes

I love having breakfasts prepared so you can grab one and go. This one is packed full of flavor and protein to start your day.

Ingredients
  

  • 18 eggs
  • 2 lbs turkey sausage
  • 6 sweet potatoes
  • 2 cups Kale chopped
  • 1 onion diced
  • Salt and Pepper to Taste
  • 6 drops Tabasco

Instructions
 

  • Preheat oven to 425 Peel and dice sweet potatoes. Spray a cookie sheet well with olive oil. Bake for 30 min (watch so they are just tender)
  • In a large bowl break eggs, whip with whisk for 3 minutes. Add salt and pepper, tabasco. In same pan as you cooked sausage, cook onions until cooked through, add egg mixture and scramble until just underdone and add spinach or kale.
  • In large skillet, brown sausage (casing removed) drain, rinse and set aside.
